*7  Within the pepsi cooler, raw beef was found stored above and alongs a ready-to-eat food--lettuce. DUE TO THE DIFFERENT types of meat, SEPARATE RAW MEATS PRODUCTS. SO, TO PROTECT FOOD FROM POSSIBLE CROSS CONTAMINATION, STORE FOOD PRODUCTS IN THE FOLLOWING ORDER:(FROM THE BOTTOM TO TOP): (1) RAW POULTRY--CHICKEN AND TURKEY, (2) GROUND MEATS--BEEF AND PORK, (3) WHOLE MEATS--BEEF AND PORK, (4) RAW SEAFOOD, (5) FRUITS AND VEGGIES, AND (6) READY-TO-EAT FOODS AT THE VERY TOP [750.130]. Immediate/Onsite
*20  The sanitizer bucket located of the floor next to the pizza oven was found to be too strong-- the solution had >200 of avaiable chlorine. A chlorine sanitizer shall container 50 to 100 PPM of available cholrine [750.830]. Immediate/Onsite
observed several food containers without proper labeling, including several containers of food ingredients stored near the pizza dough maker and the adjacent storage rack, and, in addition, cooling potentially hazardous foods within the walk-in cooler. Management shall ensure that ALL COOLING POTENTIALLY HAZARDOUS FOODS are LABELED WITH THE DATE AND TIME THAT THE COOLING PROCESS BEGAN or with a discard date [750.140]. Also, ANY FOOD ITEM BEING STORED IN A CONTAINER THAT IS NOT ITS ORIGINAL container SHALL BE LABELED WITH THE FOOD ITEM'S COMMON NAME [750.130. Next Inspection
10  The dispening scoop within the flour container is improperly stored--the handle was touching the food product. In addtion, a knife is being stored in the gap between the small reach-in cooler and the adjacent prep table--the gap is found to be unclean. Provide for all utensils to be stored in one of the following manners: (1) in a Clean and dry container or (2) In the food product with the handle up and out of the food product [760.280]. 13  Employees handling food in the kitchen have no hair restraints. Employees shall use effective hair restraints to prevent the contamination of food or non-food contact surfaces [750.750]. Next Inspection
14  The cutting boards installed on the large reach-in cooler and on the small reach-in cooler have deep and excessive knife groves that are discolored. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbant, corrosive resistant, and light colored [750.650] Next Inspection
15  The cover for the frigidaire chest freezer, located near the rear exit, is in poor repair--the cover along the edges cracked. Provide for all non-food contact surfaces to be kept is good repaire and shall be smooth, easily cleanable, non-absorbant, corrosive resistant, and light colored [750.600]. Also, the mop sink is not properly secured to the wall--it is found to be held to the wall with adhesive tape. All equipment in a food facility shall be maintained in good repair [750.600]. 23  Observed the following non-food contact surfaces to be unclean: (1) hand sink handle,(2) the door of the walk-in cooler, (3) shelves in "RIF-1," (4) exterior and interior of the two fryers, (5) exterior of the pizza oven, (6) exterior of the grill, and the (7) top surface of the table holding the grill. 36  In the kitchen, I observed all floor areas under equipment to be unclean. In addition, the floors within the walk-in cooler and in the dry storage room is unclean. Provide for all flooring areas to be in a clean condition [750.1220] Next Inspection
37  In the kitchen, the wall behind the ice-machine and under the 3-compartment sink is unclean. In addition, the wall behind the large reach-in cooler in the kitchen is unclean. Provide for all walls, ceilings, and attached equipment to be in a clean condition [750.1220]. Next Inspection
